Crispy Sea Bass with Spicy Citrus Sauce
Required Items
Four fillets of sea bass
One small onion, chopped One tiny piece of fresh ginger (about the size of a walnut), peeled and sliced
1/2 an onion, diced 1 bunch fresh cilantro
Extra Virgin Olive Oil, About a Quarter Cup
Lime Juice, 1/4 Cup
Garlic, chopped, 1 tbsp
Two tablespoons of chopped jalapeo pepper Two teaspoons of grated lime zest
a single freshly ground peppercorn
To taste, with sea salt
Mix the onion, ginger, chopped cilantro, garlic, chili, olive oil, the juice of the lime, the lime zest, and pepper in a blender and food processor. Make a paste by pulsing the items together. Lightly salt the fish fillets and place them in a container. Coat each fish well with the paste. Put in the fridge for at least an hour with the lid on.
When you’re ready to serve, salt the fillets once more. Sea bass takes around four to five minutes per side to cook through when grilled over medium-high heat after being sprayed with cooking spray. Take off the heat and place on plates.

BBQ Shrimp with Garlic and Paprika
Required Items
1 kilogram of shrimp, cleaned and dried
1 minced big garlic clove
4 teaspoons of butter
1/2 teaspoon fine salt
Lemon juice, freshly squeezed, 2 tablespoons
Paprika, one teaspoon
a pinch of red pepper flakes
One whole lemon cut into wedges
Mix together garlic, the olive oil, salt, juice from one lemon, paprika, and cayenne to form the spicy paste. Cover shrimp with paste and chill for no fewer than 15 minutes. Put the shrimp on a grill pan that has been gently greased, or skewer them.
Grill over direct heat until done, approximately 2 to 3 minutes each side. Place on a serving platter and accompany with lemon quarters.
