Corn and Black Bean Salad

This salad has a very flavorful citrus vinaigrette and is very vibrant.

Preparation: twenty-five minutes

Serving 4 to 6

Ingredients:

A third of a cup of fresh lime juice

half a cup olive oil

1 minced garlic shallot

1 teaspoon salt

1/8 teaspoon cayenne pepper powder

2 (15-ounce) cans of rinsed and strained black beans

1 1/2 cups thawed kernels of corn

1 avocado – skinned, pitted and diced

1 diced red bell pepper

2 tomato fragments

6 green scallions, sliced thinly

1/2 cup freshly cut cilantro (optional)

Method:

In a small canister, combine lime juice, olive oil, cloves, salt, and cayenne pepper. Cover with a lid and agitate ingredients until thoroughly combined.

Combine legumes. corn, avocado, bell pepper, tomatoes, green scallions, and cilantro in a salad bowl. Pour citrus vinaigrette over the salad after shaking it. Toss salad with vinaigrette to coat carrots and legumes, and serve.

Spinach Quiche

This delectable deep-dish pie contains feta cheese that dissolves and combines with each slice. The cheese is sautéed with spinach, spores, Cheddar cheese, and an abundance of garlic. Then, this mixture is combined with milk and eggs and placed into a crust that has been prepared. A touch more cheese made from cheddar is scattered on top, and the quiche is baked until set.

Ingredients:

1/2 cup butter

3 minced garlic cloves

1 tiny minced onion

1 (10-ounce) package of chilled, drained frozen shredded spinach

1 (4.5-ounce) can of rinsed mushrooms

1 (6-ounce) package of shredded herb-and-garlic feta

1 (8-ounce) package of Cheddar cheese shreds

salt and pepper to flavor

1 unbaked nine-inch deep dish pie pastry

4 eggs, beaten

1 cup milk

The addition of pepper and salt to flavor

Method:

  1. Preheat the oven to a temperature of 375 F (or 190 degrees C).
  2. In a medium-sized skillet, soften butter over a medium-high flame. In butter, cook garlic and onion until faintly browned, concerning 7 minutes. Add spinach, mushrooms, feta, and a half cup of Cheddar cheese to the pan. season with pepper and salt. Spoon mixture through pie pastry.

In a medium basin, whisk eggs and milk together. season with pepper and salt. Pour the egg mixture into the pastry crust, allowing it to combine entirely with the spinach mixture.

In a preheated oven, bake for 15 minutes. Bake another 35 to 40 minutes, or until the center is set, with the remaining Cheddar cheese on top. Allow to rest for 10 minutes prior to serving.
