Fed up with the same old fare at the campground? If you’re looking for something to cook over the fire that’s both simple and delicious, try some fish. Most importantly, it provides a welcome change of pace from the standard morning meat and egg fare. And fish is much healthier than that! Try one of these fish dishes over the campfire on your next fishing trip:
Tacos de pescado al campo
Required Items
With fish in mind:
Tostadas: 6
Two pieces of filleted snapper
1/2 lime
2 teaspoons butter
Spicy: 1 Tbsp. chili powder
Salt, 1/2 teaspoon
a pinch of cumin
Serve with hot sauce (optional).
Serve with (or instead of) potato chips.
Corn salsa calls for:
Corn on the cob, two ears
1/2 lime
A half of a chopped red onion
One jalapeno
a little handful of chopped fresh cilantro
Adequate salting
Get the barbecue or campfire going. The corn and jalapeño should be grilled over medium heat for approximately 10 minutes, or until tender.
Prepare a serving dish for the fish. Sprinkle both sides of the fillets with chili powder, salt, and cumin, and then drizzle with the juice of half a lime and a tablespoon of olive oil. Prepared fillets should be grilled over direct heat for 3 minutes each side. Take off the stove and put aside.
The salsa may be made by cutting the corn from the cob and placing it in a basin. Remove any browned bits from the jalapeño and chop it before adding it to the dish. Throw in some onion, cilantro, lime juice from half a lime, and salt.
Prepare the tacos by filling the tortillas with the fish and topping them with salsa. Accompany with potato chips and, if preferred, some spicy sauce.
Salmon with Lemon Pepper and a Campfire
Required Items
One kilo of salmon fillets
Two lemons, cut into thin rounds
1 stick of butter
Season with Kosher salt
A dash of black pepper
Garnishing parsley
The salmon fillet should be rinsed in cold water and dried with paper towels. Put lemon slices in a heavy duty baking pan lined with foil. In the centre of the pan, add the butter and then place the salmon skin-side down on the surface of the lemons.
Kosher salt & black pepper are sprinkled on the fillet before the skillet is covered with foil. Cook over an open fire or a grill that has been preheated. Fish should be cooked about 18-20 minutes over medium-high heat until flaky.
