Crock Pot Chicken Thighs With Tomatoes and Peppers

Here’s a great recipe for chicken thighs cooked in a slow cooker. Everyone in your home will like this quick and simple meal. Prepare it in the morning, and you’ll have a cheap meal waiting for you when you get home from work.

What You’ll Need

A 3-4 pound package of frozen chicken thighs without the bones. (Fresh would need less time in the oven.)
Two cups of chicken stock
Two (16-ounce) cans of diced, seasoned tomatoes.
1 package of frozen bell pepper and onion slices
1 tablespoon of dried minced garlic
a pinch of onion powder (1 tablespoon)
Pieces from one small can of mushrooms.
To eat pasta or rice (see below)

Put the two cups chopped chicken broth and the two cans chopped tomatoes inside a large slow cooker. We like combining different canned tomato tastes, which include Italian and Mexican.
